Tre Zucchini

I was forced to eat too much of this bland vegetable as a child because it was super easy to grow; and as an adult, I’ve shunned zucchini as a tasteless and mushy vegetable. But after painting this trio, I forced myself to give it a go in a frittata with bacon, potatoes, and onions; and it was excellent! I’ve been known to proclaim to my friends that any vegetable can be delicious when properly cooked, and I’ve proved my own hypothesis cooking this vegetable I’ve maligned since childhood.
