South of the Border Slaw
This south of the border inspired slaw tastes like a fiesta in your mouth! A lil’ heat from thin slices of red onion and finely minced jalapeno contrast deliciously with pineapple and carrot’s natural sweetness. Fresh lime juice brings the acid; while chopped cilantro, coarse salt and freshly ground pepper round out the meld of flavors. So good AND so good for you!
In a large bowl, toss all ingredients together and season to taste with salt and pepper. Let stand for at least 30 min. and toss again before serving.
1/2 head green cabbage, thinly sliced on mandolin slicer
1 pineapple, cored and diced
1/2 large red onion, thinly sliced on mandolin slicer
4 large carrots, finely chopped in food processor
1 jalapeno, seeded and finely minced
